CAC Recipe of the Month: November 2014

Scrambled Eggs

  • Third Grade
  • Prairie Trace Elementary

Ingredients

  • 8 eggs
  • 4 Tablespoons Half and Half
  • 1 Big Pinch of Salt 1
  • Twist of Cracked Black Pepper
  • 2 Tablespoons of Extra Virgin Olive Oil

Directions: Set a nonstick frying pan on medium heat. Crack all eggs into a bowl and using a fork beat eggs until completely mixed. Add half and half, salt and pepper. Beat mixture some more. Add oil to frying pan and swirl around. Pour eggs into pan and let set until you see them setting up around the edge of the pan, then push eggs to center and keep doing this until all liquid is cooked. About 3 to 5 minutes. Serve and enjoy!

Rainbow Spaghetti Pizza

Dinner, serves 6

Ingredients:

  • 1 Tablespoon Olive Oil
  • 1 Medium Carrot
  • 1 each – small red, green and orange bell peppers, diced small
  • 1 small jar of pizza sauce
  • 1/2 package of turkey pepperoni
  • 1/2 cup sliced black olives
  • 1/2 pound of whole grain or vitamin enriched spaghetti noodles
  • Low fat mozzarella cheese, shredded (to taste)
